Yellowstone and the Grand Tetons

I feel like it's been forever since I have been cooking, much less blogging on a regular basis. We just got back from a great vacation in Jackson Hole and Yellowstone. What a beautiful area. Les and I are already planning our next vacation to Jackson Hole.
I took a bunch of pictures, but my camera lens just couldn't capture the beauty of the area. I tried though. The kids loved seeing the wildlife. I enjoyed seeing the animals too, except when they were the cause of a traffic jam.
The bison look better in their own habitat.
The elk were beautiful and peaceful looking. You can't tell from the picture, but the baby was playing with a bird. It was beautiful to watch.
We saw so much beautiful scenery that we became almost blasé. Almost, but not quite.
Did I mention the fact that President Obama arrived at Old Faithful while we were there? No? Well he did, so we ducked into the restaurant for lunch while the crowds surged outside waiting for a glimse of him. Our waitress scared us a little when she said no one could go in or out of the Inn untill 3pm. My day of seeing Yellowstone flashed before my eyes. That would completely ruin our schedule, but she was back soon to tell us we could get out the side doors but not the front doors. Phew! Our day was saved.
I had a great time with my family on our road trip, but I am excited to get back to the kitchen to cook, bake and blog. I will be posting a new recipe soon!

I’m Dreaming of a Cupcake Summer

I’m not really dreaming of a cupcake summer, I’m actually living it. My daughter has been very busy with Les Miserables rehearsals in the evenings, but her days have been mostly free of obligation. So what has she been doing with her days? She has been working her way through Martha Stewart’s Cupcake book. We have been enjoying her cupcake adventures. I just hope my winter clothes still fit.

Blueberry Cupcakes
She made Blueberry Cupcakes for 4th of July. These cupcakes were delicate with a light and fresh whipped cream frosting. We added raspberries to complete our red, white and blue theme.

Mini Trifle Cakes
Next she made the Mini Trifle Cakes (This recipe came from the Cupcake Doctor cookbook not Martha). My daughter made these to go with the Barbeque Ribs. These cakes tasted delicious after the ribs.

Raspberry Marble Cheesecakes
Raspberry Marble Cheesecakes were the next “cupcake” adventure. These were so good—The perfect cheesecake bite.

Snickerdoodle Cupcakes
We hadn’t even finished the Raspberry Marble Cheesecakes when she made Snickerdoodle cupcakes with the most delicious frosting. The frosting tasted like smooth and creamy marshmallows. Yum.

And, she isn’t finished yet. I think she plans to make the Peanut Butter and Chocolate cupcakes next. I’ll let you know.
