White Pizza (which I made for myself last pizza night), but I love this pesto pizza with roasted red peppers, pine nuts and feta. I had this pizza for the first time a couple of years ago when a group of friends ordered it for an evening in the park we were enjoying during the summer. My pizza life has never been the same since.
¼ recipe Bread Machine Pizza Dough (or any other pizza dough you like)
2 Tablespoons Pesto
1 cup Mozzarella Cheese
1 Tablespoon Feta Cheese
5 or 6 thin slices of roasted red pepper
1 Tablespoon Pine Nuts
Preheat the oven to 400°F. Shape the pizza dough, and place on a pizza pan. Spread the pesto on the top of the dough, leaving about a one-inch boarder around the edges. Top with the mozzarella and feta cheeses. Sprinkle with roasted red pepper and pine nuts. Bake for 10 to 15 minutes, or until the crust is golden brown and the cheese is melted. Makes a 10-inch pizza.
